Aloo Curry (Potato)

Ingredients

1 cup potato, peeled and chopped
2 tbsp cooking oil
¾ cup water
2 dried red chillies
1 tsp fennel seeds
1 tbsp cumin powder
¼ tsp asafoetida/ hing
1 tsp coriander powder
½ tsp turmeric powder
1 tbsp chilli powder
1 tsp amchur (dry mango) powder
1 tsp kasuri methi
salt to taste
coriander leaves to garnish

Directions

1.

Start the cooker in “Sauté” mode and let it heat. Add oil, cumin seeds, asafoetida, and ginger. Sauté for 30 seconds.

Add tomatoes and spices. Sauté for 3 minutes.

Add potatoes and water. Stir well.

Mark as complete

Choose the ‘Idly/Steam’ mode. Do manual release of pressure.

Open lid and add garam masala and dry mango (amchur) powder. Stir and mash some potatoes with the back of the ladle. This will help thicken the curry. If you like a thinner gravy, you can add some water and let it come to a boil on sauté mode.

Garnish with cilantro and enjoy with poori, naan or rice.
