Steamed Jackfruit Cake

Ingredients

Adjust Servings
3 cups Ripe Jackfruit cut into small pieces
1½ cups Powdered Jaggery
2 cups Roasted Rice flour
1 cup grated Coconut
¼ tsp Cardamom Powder
¼ tsp Cummin Seeds
Salt to taste
Banana leaves cut to medium sized pieces
Instead of banana leaf you can use Indian Bay Leaf.

Directions

1.

In a small pot, take jaggery with 1/2 cup water & heat until it melts completely. Then strain it to remove any impurities.

Heat a heavy bottomed pan with ghee. To this add chopped jack fruit pieces & saute for 5 to 10 minutes on low flame. Make sure it doesn't stick on to the bottom of the pan.

To this add melted jaggery syrup & mix well. Cook for about 10 minutes, until the jackfruit becomes soft & the mix thickens.

Add grated coconut, cardamom powder, cummin seeds & salt to taste & combine well.

Now add the roasted rice powder & mix everything till it gets well combined.

Meanwhile cut the banana leaves into medium sized pieces & wilt them in open flame to make it slightly soft.

Apply some ghee on the banana leaf and add lemon sized dough in the centre.

Now spread it with your finger on the banana leaf & fold it into half to form a wrap.

Repeat the same till the dough is over.

Now arrange them neatly inside the Electric Pressure Cooker & turn on the manual option & set the timer to 30 minutes & turn to sealing mode.

Once completely cooked, the banana leaves will appear darker.

12.

Once it is completely cooked, allow it to cool & serve with hot tea.
