Mixed Fried Rice

1 cup Basmati Rice
1.5 cups Water
250 grams Boneless Chicken
250 grams Prawns
2 Eggs
1 tbsp Ginger (minced)
1 tbsp Garlic (minced)
1/4 cup Chopped Onion
1/4 Cup Chopped Capsicum
1/4 Cup Chopped Carrots
1/4 Cup boiled green peas
1/4 Cup Chopped Cabbage
1/4 Cup Chopped Spring Onions (White & Green)
1 tbsp Soy Sauce
Vegetable Oil as per requirement
1 tbsp Pepper Powder
1 tsp Vinegar
Salt to taste



Cook the rice:

Cook one cup of rice with 1.5 cups of water. Add rice & water into the electric pressure cooker. Close the lid & press 'Rice' button.
Mark as complete

Scramble the eggs:

Turn on the Sauté button and add little oil to the cooking pot. Once hot, add the eggs. When it begins to get fried, stir-fry with a spoon to scramble it. Remove it and keep aside.

Prepare the meat:

Take the diced chicken and season with some salt, soy sauce and pepper powder. Heat little oil in the pot and add the meat. Stir-fry until the meat is cooked through. Remove and keep it aside.

Prepare the prawns:

Take the cleaned & deveined prawns and season with some salt and pepper powder. Heat little oil and stir-fry the prawns. Once done, remove from the wok and keep it aside.
Mark as complete

Add the vegetables:

Heat one tablespoon oil in the same pot and add minced garlic and ginger. Stir-fry for a minute. Add the chopped vegetables and green peas. Cook for couple of minutes.
Mark as complete

Add the sauce and vinegar:

Add soy sauce, vinegar, salt and fried chicken. Mix well.
Mark as complete

Mix the rice:

Add the cooked rice. Stir-fry everything together until the sauce coats the rice & vegetables and meat & prawns are uniformly distributed.
Mark as complete

Garnish & Serve:

Finally garnish with chopped spring onions & scrambled egg. Serve hot.
