Pot Pav Bhaji

Ingredients

Adjust Servings
1 tbsp butter
1 onion, chopped
1 tsp Garlic paste
1 tsp Ginger Paste
4 potatoes, peeled and chopped
2 tomatoes, roughly chopped
1 cup water
1/2 cup frozen peas
1 cup cauliflower florets
2 tsp tomato paste
1 tbsp pav bhaji masala
1 tsp Kashmiri red chilli pepper powder, or to taste
salt to taste
To Serve
1 ½ tbsp butter
4 dinner rolls / buns (pav), halved lengthwise
¼ red onion, minced
2 tbsp chopped fresh corriander
½ lime, cut into wedges

Directions

1.

Heat 1 tbsp butter in pot and Sauté onion until translucent. Add garlic and ginger paste.

Add potatoes, tomatoes, cauliflower, tomato paste, pav bhaji masala, and red chilli pepper powder into onion. Select Cancel.

Add 1 cup of water and Select Pressure Cook (Manual) and cook for 10 mins on High Pressure.

Once cooking cycle is done, mash all the contents in the pot, so it becomes like a thick gravy. Add in Green Peas.

Heat 1½ tbsp butter on a pan or skillet over medium-low heat; add rolls. Cook until rolls are lightly toasted, about 1 min. Flip and cook until toasted on the other side, about 1 min more.

6.

Transfer bhaji gravy to a bowl and top with red onion, fresh coriander, and lemon juice. Serve with toasted rolls.
