Ingredients

Adjust Servings
2 tbsp ghee
2 onions, diced
1kg boneless mutton, cut into 1.5-inch cubes
6 tsp minced garlic
2 tsp minced ginger
1 bay leaf
Spices
4 tsp Kashmiri chilli powder or paprika
3 tsp coriander powder
1 ½ tsp salt, adjust to taste
1 tsp garam masala
1 tsp turmeric
½ tsp black pepper
½ tsp cinnamon
½ tsp ground cardamom
¼ tsp ground cumin
⅛ tsp ground cloves
1 (15 ounce) can tomato sauce
8 tbsp yogurt (or dairy-free yogurt)
cilantro, for garnish

Directions

1.

Press the Sauté́ button and add ghee to the pot. Once the ghee melts, add the onions and mutton and stir-fry for 6-7 minutes, or until the outside of the mutton pieces are no longer pink.

Add the garlic, ginger, bay leaf and spices and give everything a good mix.

Add the tomato sauce to the pot and cook for 2-3 minutes. Stir in the yogurt, one tbsp at a time.

Secure the lid, close the pressure valve.

Choose “Meat” mode.

After Pre-Cooking is done, the cooking countdown will appear. After cooking, it stops with a beep sound and automatically switches to ''Keep Warm mode''. Press Cancel button if warming is not required.

Wait for 10 minutes to get Natural Pressure Release. It can be released manually by pulling Up the pressure release button.

Open lid, press the sauté́ button and cook for 4-5 minutes to boil off some of the liquid and reduce the gravy to a stew-like consistency.

Garnish with cilantro leaves and serve.
