Signature Mutton Yakhni Pulao

Ingredients

Adjust Servings
500 gms Mutton (with bone)
4 tbsp oil
2 tbsp whole cumin seeds
2 onions chopped
1 onion slices (to deep fry separately for Garnish)
1 tbsp Ginger Paste
1 tbsp Garlic Paste
1tbsp salt, or to taste
1 tbsp Pepper
½ tbsp Kashmiri Chilli Powder
1 tbsp Ghee
1 cup Basmati Rice
2.5 cups water
Whole Spices to Wrap in Cloth (Potli) – 1/2 tbsp coriander seeds, 1 tbsp black peppercorns, 1 bay leaf, 8 green cardamoms, 2 black cardamom, 1 star anise, 6, clove, 1 cinnamon stick
Fresh Coriander leaves and Mint leaves - handful for garnish

Directions

1.

1. Saute onions, cumin seeds, ginger and garlic paste

2. Add Mutton, Salt, Pepper, Kashmiri Chilli powder and stir for 2 miuntes.

3. Add 3 cups of water, add in the cloth potli with spices. Close lid and cook on ‘Manual’ mode for 30 minutes.

4. Once cooking cycle is over, open lid and add the rice and 1 Tbsp of Ghee

5. Close lid and cook on ‘Rice’ mode

6. Garnish with fried onions, coriander leaves and mint leaves.

7. Serve with Raita and Enjoy!
