Ingredients

2 tbsp unsalted butter or olive oil | |
2 Nos bay leaves | |
2 Nos carrots, chopped | |
6 cloves garlic, minced | |
1 rib celery, chopped | |
1 medium onion, diced | |
450gms green split peas | |
6 cups unsalted chicken stock | |
1 pinch dried thyme |
Directions
1.
Add in unsalted butter or olive oil, then quickly add in diced onions to prevent the butter from burning. Season with a pinch of salt. sauté diced onions until soft (~2 mins).

Add minced garlic, a pinch of dried thyme, and bay leaves, then sauté for another minute. Optional: ad chopped carrots & celery, then sauté for another minute.

Pour ½ cup unsalted chicken stock. Scrub all the brown bits off the bottom of the pot (keep the brown bits as they add to the flavour).

Add in chopped carrots and celery. Add green split peas Pour in 5 ½ cups unsalted chicken stock.

Pressure cook in “Soup” mode + 10 minutes Natural Release.
