Chicken Biriyani

Ingredients

Adjust Servings
3 tbsp Ghee
2 tbsp Coconut oil (optional)
Cashews & Rasins (handful)
4 Onions
3-4 each of Bay leaf, Green Cardamoms, Cloves, Cinnamon, Star anise
1 cup Yogurt
1 tbsp each of Ginger & Garlic paste
4 Green Chili
5-6 strands Curry leaves
2 Tomatoes
1 tsp each of Coriander powder, Chili powder, Turmeric Powder, 2 tbsp Garam masala
Few coriander and mint leaves (optional)
Salt, as required
750g Chicken
1 cup Basmati Rice

Directions

1.

Select "Saute" option and add ghee.

Add cashews, raisins, onions and sauté until it turns light brown. Keep it aside.

Add more Ghee and saute Bay leaf, Green Cardamoms, Cloves, Cinnamon, Star anise.

Mark as complete

Add ginger garlic paste, tomatoes, green chilly and few curry leaves and mix it.

If items stick to the bottom of the cooker, add some water and deglaze the bottom.

Add the Chicken and sauté for 2-3 minutes, along with Coriander powder, Chili powder, Garam masala.

Add Yogurt, and 1 tbsp salt.

Layer rice on top of the chicken. Add 2 cups water (ensure rice is submerged in water).

Close the lid and turn the pressure releasing valve to sealing position.

Click on "keep warm/ cancel" button, then select "Rice".

11.

After the cooking time has elapsed, the cooker automatically switches to "keep warm". Do quick release of pressure.

Open lid and add garnishing items (sauted cashews, raisins and onions) and mix well. Can also add coriander and mint leaves.
