Ingredients

750 grams boneless, skinless chicken thighs, cut into 2-inch pieces
2 tbsp ghee or cooking oil
1 large onion finely chopped
1 tbsp fresh ginger grated
1 tbsp fresh garlic minced
1/2 tsp turmeric
4 tomatoes pureed
1 tbsp Kashmiri red chilli powder
1 tsp garam masala
1 cup coconut milk (optional)
2 tsp sugar
Salt, as required
1/4 cup Cream
2 tbsp Tomato Ketchup or Paste
2 tbsp dried fenugreek leaves (Kasturi methi)
Coriander Leaves, handful, for garnish

Directions

1.

Set Cooker on “Sauté” mode and heat ghee. Add onions and salt. Cook until onions are soft and translucent for 2-3 mins.

Add ginger, garlic, turmeric, red chilli powder. Mix well and cook until fragrant for 2 mins.

Add 1/2 cup of water and pureed tomatoes mixing with spices. Add chicken and stir well.

Close the Cooker lid with steam release handle to sealing position. Set to “Chicken” mode.

5.

Once cooking cycle is complete, do quick release of steam. Open the Cooker, stir in cream, coconut milk (optional), tomato ketchup, garam masala, fenugreek leaves, sugar. Add more salt if needed.

6.

Turn the Cooker to “Sauté” mode. Cook without the lid to allow the curry to thicken for 5 minutes.

7.

Garnish with Coriander leaves
